During my undergraduate years, I had a terrible reputation among my friends for not being a particularly good cook. I felt I didn’t have the confidence or the patience to really WANT to be a good cook either. But when I became a vegetarian (I have since transitioned to veganism*), I was at once forced and inspired to fend for myself in the kitchen, which lead swiftly to a surprising love affair with vegetables and the ways they could be cooked, prepared and served. Now I am by no means “a great cook,” but I enjoy finding, experimenting with (or just making up!) recipes that are meat-free, wholesome, simple and tasty. On this page you’ll find a (growing!) list of recipes that are just that.
*I began this blog when I was still a vegetarian, so some recipes do contain animal products like dairy and eggs.
