Chickpea Chocolate Chip Cookies
1 can chickpeas
2 tablespoons peanut butter
3 tablespoons tapioca flour
1 tablespoon rice bran oil
1/4 cup coconut sugar
1/2 cup – 1 cup chocolate chip cookies (depending on how chocolaty you want them!)
Preheat the oven to 180 C.
Whizz everything except the chocolate chips in a food processor until smooth.
Add in chocolate chips and combine.
Roll the mixture into balls, and place on an oiled tray (or on baking paper), and pop ’em in the oven for 10-15 minutes.
They taste best when still warm and gooey from the oven : )
